Any weekend is a great time to cook dinner with friends. I had a wonderful surprise when two friends offered to cook dinner and deliver it to my house—how great does that sound. My initial panic quickly turned into delight when I realized all of those half-finished and postponed projects were being finished in record time!
The guest chefs arrived with delicious food, beautiful garnishes and serving platters in hand. ‘Mr.P’ served champagne by the front door along with local blackberries and those crazy delicious cheddar-chili crackers made fresh by Mountain Fresh Groceries.
Poached salmon in a bed of lettuce and cucumber and garnished with lemon and dill was the star of the dinner table. Gazpacho made from a family recipe was the absolute most delicious version I have ever had—really. Fresh shrimp, corn and tomato salad rounded out the menu. A large fresh fruit salad featuring those famous local blackberries was dessert—how healthy is that!
Why not follow the lead of my fabulous friends and bring dinner to someone’s house soon—or volunteer your house!
