The farm fresh produce has come to an end here in the North Carolina mountains. But a recent trip to the Cashiers Organic Farmers Market inspired me to cook an all time favorite recipe—roasted tomato and thyme soup. I used Sophie Dahl’s recipe from her cookbook, Miss Dahl’s Voluptuous Delights. This recipe was also featured on her BBC Two show The Delicious Miss Dahl—the Nostalgia episode. This soup is easy and delicious—the perfect combination for comfort food. Try it on your next cold, rainy day and add a little warmth to the soul.
