
The most delicious moments are definitely in your own kitchen these days. I have been chopping, sauteing, roasting, baking, and grilling up a storm in the past few months…I might even be saving money.
I don’t do small batches of anything. Cooking in huge batches lets me freeze half for later and enjoy a day without cooking. We even grill lots of chicken and shrimp then make shrimp or chicken salad, fajitas, soup or freeze the rest for another meal.
Lately, Mr. P has had a sweet tooth and that means large crumbles or cakes—he is not a pie crust eater. And Pizza night is genius with kids in the house. Chopping relieves stress and lets everyone help with dinner.
Gather a few ideas from me or just turn on Youtube for a little inspiration…next is Jamie Oliver’s Lasagna!
